The smallest of the triveneto regions, Friuli Venezia Giulia closes Italy to the east, where the Latin world comes into contact with the Slavic world. Its capital, Trieste, is a city historically devoted to maritime trade; the rocky territory of the Karst, a paradise on earth from a naturalistic point of view, represents one of the world’s most vocated areas for white wine production.
A historic recipe from this region is Frico, a Friulian recipe served as a main course or main dish, originating in the mountains of Carnia and made with potatoes, onion and melted cheese. In the Friuli area it is also easy to come across ancient preparations that are still maintained as they were in the past, such as Pitina, a special game and goat sausage.
