The process that gives birth to the Rubini family’s Balsamic Vinegar of Modena DOP aged a minimum of 12 years is fascinating and exciting. As per the production regulations, the main grapes from which the must that will be cooked is obtained are Lambrusco and Trebbiano; the nectar obtained is then left to age in barrels of different woods and sizes: each wood will give a particular characteristic to the final product, which is decanted from larger barrels into progressively smaller ones as the years go by.
