The Angelini family has its land in an area particularly suited to agriculture, which is why the saffron produced in the Umbrian part of the Apennines is also of particular quality. As for this famous spice, too, harvesting is done exclusively by hand.
After planting the saffron bulbs that will turn into flowers, harvesting must be done in early autumn, usually in October. It is essential that the flowers be harvested very early in the morning, when the sun is still rising so that the flowers are not fully open. The stigmas must then be separated by hand and gently from the rest of the flower, and then placed to dry in the sun on a board or cloth.
The classic use of saffron is in risotto alla Milanese; however, it can also be used for pasta dishes with a distinctive flavor and is also often used in the production of arancini. Some bubbly, even pink, complements the excellence of this spice.
