In this recipe, Giovanna Cerio, wanted to combine delicious chickpeas from Molise with the delicious black summer truffle to make a cream suitable for the most refined palates and for those who want to enjoy truffles without animal derivatives.
The unmistakable taste of mountain chickpeas pairs wonderfully with black truffle for a healthy and tasty condiment. Try it on bread with a drizzle of Italian extra virgin olive oil that can enhance its fragrance, or as a condiment for a special pasta dish. Even as an accompaniment to meat, it comes into its own.
