Cibreo is a traditional Florentine recipe that has Renaissance origins. Made from the “scraps” of chicken, Catherine de’ Medici was its number one admirer. Cooking master Pellegrino Artusi also devoted special attention to this dish, describing it as follows: “a simple, but delicate and gentle gravy, appropriate for ladies of listless and convalescent stomachs.”
