Turnip greens are an all-Italian delicacy, typical just of Molise and Puglia in particular. It is a delicious firstling, the protagonist of many traditional Apulian and Molise recipes. It is closely related to broccoli, but unlike the latter they have a very intense, almost spicy and bitter flavor.
Giovanna Cerio prepares her turnip greens in oil by marinating them first in vinegar, then coating them in Apulia’s extra virgin olive oil, using only natural ingredients.
Turnip greens are excellent as an appetizer, on bruschetta, or as a side dish for meat and cheese; the most typical recipe in which they are featured is precisely that of orecchiette alle cime di rapa, a true delicacy!
