PRODUCT DESCRIPTION
Until the 18th century, the territory that is now called Colline Pontine DOP consisted mainly of marshy and agriculturally unfruitful land. In those years, therefore, the Papal State, through a massive agricultural operation, engaged in the promotion of olive growing as a means of reclaiming those lands that were so magnificent but until then wasted. Through an important edict, the Papal State committed itself to recognizing 10 scudi (the currency of the time) for every 100 olive trees planted. In this way, olive growing came to occupy, in the last years of the 1700s, almost 50,000 hectares of the territory that today is part of the DOP Colline Pontine.
The olives of the Itrana cultivar that give rise to Alfredo Cetrone’s Colline Pontine DOP EVO oil are grown at an altitude between 250 and 500 meters above sea level, in a cru of soil with ideal characteristics for the production of EVO oil and cultivated since ancient times, so much so that it has been awarded the prestigious DOP.
The harvest period is from October 1 to December 31, depending on the year and the ripeness of the olives.
It is clear to the eye, a beautiful green color with golden highlights.
The nose offers a broad and complex bouquet, characterized by herbaceous scents with fruity hints of tomato.
The taste opens with elegant tomato notes, with bitterness and spiciness present and in good harmony. With great structure and elegance.
In the kitchen it is ideal used raw on farro and legume salads, artichoke and wild mushroom crudities, fish and beef carpaccio and tartare, raw shellfish, marinated fish, vegetable and legume soups, risottos, grilled fish, grilled white and red meats, raw and cooked vegetables, fresh and aged pasta filata cheeses.

The benefits that can be obtained from a very pure, high-quality Italian extra virgin olive oil are many: thanks to the high presence of polyphenols and oleocanthal, the main culprits responsible for that pungency and bitterness that made us fall in love with it, EVO oil has very high anti-inflammatory properties that make it a real natural medicine; the presence of almost exclusively monounsaturated fats allow EVO oil to go to reduce cholesterol, thanks to regular consumption over time; finally, Italian green gold has a considerable amount of vitamins, particularly group D, which are excellent for the heart, immune system and bones, and group E, called youth vitamins, thanks to their ability to act on cells by slowing down the aging of skin, hair and the whole body.

For our craft beers, which are unpasteurized and therefore more sensitive to high temperatures than normal, we use a special isothermal bubble wrap, which can ensure that the accumulated cold is maintained for the shipping time while protecting the bottles from shocks.
To secure the precious bottles of Italian wine, we have equipped ourselves with special inflatable bags, designed solely for the purpose of immobilizing and protecting this product inside the box.
For jars containing a thousand Italian goodnesses, we use special protective bubble wrap liners.
