“Dall’occhio” Beans are the only remaining legume native to the so-called Old World. Its origins in fact lie in Africa and Asia; in Greek and Roman times it was considered the sacred food of priests, while in the Middle Ages it was the food of the people. Its distinctive name derives precisely from the black spot with white center that resembles an eye.
“Dall’occhio” Beans require soaking in cold water prior to cooking for about 12 hours, our advice is to leave them overnight in water and drain them the next morning. Cooking takes about 1 hour on low heat or 30 minutes in a pressure cooker.
