The goal with which this oil was conceived is very clear. Giacomo wanted an oil that would be able both to be respected by very marked flavors (such as raw artichoke) and to complement somewhat flat flavors such as carrot.
Il sogno del pinzimonio comes from a blend of oils and not olives. Monovarietal oils from Moraiolo, Leccino, Frantoio and Pendolino cultivars are expertly blended to create a product with Tuscan DNA.
In Giacomo Grassi’s Sogno del Pinzimonio, the spiciness is pronounced and the bitterness kicks in at the tail end.
On the nose, notes of green almond, artichoke, radicchio, arugula and fresh grass are clearly recognizable.
The taste is intense and persistent on the palate.
In cooking, it is the ideal oil to use on Italian dishes; in particular, it is exalted with red meats, on bitter vegetables such as raw and cooked radicchio, and enhances mushroom, truffle and game dishes.

During shipping, on the other hand, each product is protected with the packaging most appropriate to its characteristics.
Cheeses and cured meats, which despite being aged require special care, travel accompanied by a special slow-release gel ice inside isothermal bags: in this way freshness is preserved until the goods arrive at your home.
For our craft beers, which are unpasteurized and therefore more sensitive to high temperatures than normal, we use special isothermal bubble wrap, which can ensure that the accumulated cold is maintained for the shipping time while protecting the bottles from shocks.
