The Giarratana onion, as can already be guessed from its name, is grown only in the municipality of Giarratana, among the Iblei mountains in southeastern Sicily, because of the ideal climatic and territorial conditions for the growth of this gem. Large in size (it can reach more than 2 kg!) and flattened in shape, its sweet flavor is never pungent to the palate as the classic onion is: this characteristic makes the Giarratana onion suitable for consumption both cooked and raw and appreciable even by those who do not particularly like onions.
“A’stimpirata” is a Sicilian dialect term for particular preparations cooked in a sweet-and-sour sauce that manages to soften and make the main ingredient, in this case the Giarratana onion, more palatable. Melchiorre and Salvatore, to dilute the onion, add capers, olives, mint, vinegar and EVO oil, for a riot of flavor and Sicilian flair. It is fantastic on bruschetta or when paired with main courses of meat as a side dish.
