Matteo Rubini has reinterpreted the classic Giardiniera of vegetables in wine vinegar by adding extra virgin olive oil from Brisighella, a superior Italian oil that balances the tartness of the vinegar, enhances the flavor of the vegetables and allows them to stay crisp. All vegetables and vinegar used are grown or produced on the Rubini farm. The addition of EVO oil makes this Giardiniera a treat of rare goodness you won’t be able to live without.
