Soup la Lucana is historically linked to Basilicata and its peasant tradition. It was called “cuccia” throughout the region, varying in composition from village to village but everywhere it was prepared to celebrate the end of the harvest and to propitiate the abundance of the new year.
Paola, Vittoria and Nunziante use fava beans, peas, beans and pearl barley in this version for a delicious and nutritionally complete soup. It should be cooked over low heat after a previous 12-hour soaking.
