With 60% cocoa
Cold-processed to preserve cocoa flavors
With an ancient variety of Sicilian blood orange
The peculiarity of fine Modica chocolate, besides the fact that it undergoes cold processing, is precisely that it is known for the spices and aromas typical of Sicilian confectionery with which it has always been blended. In this version, the rinds of an ancient variety of Sicilian blood orange were used, the Sanguinello, a type of orange harvested late between February and April and unobtainable in the mass market. The particularity of this blood orange is precisely that it has a peel rich in essential oils and very aromatic, thus able to support the strong taste of the very pure cocoa used.
Modica Chocolate can safely be called the king of all types of chocolate. Its secret lies in the unique processing method of Modica’s master chocolatiers. In fact, the cocoa is processed cold, so it never reaches a temperature higher than 40°C, with the addition of sugar and typical Sicilian spices. The low temperature allows the sugar crystals to remain intact and all the most natural aromas and flavors of the cocoa beans not to dissipate. The final texture of this magnificent chocolate is crumbly and grainy, different from classic chocolate, precisely because of the special processing and the absence of external substances such as milk, soy lecithin and hydrogenated fats.
