Monteleone Spelt of Spoleto is a spelt of the triticum dicoccum variety that can only be cultivated in the Monteleone area: this exclusivity is due to the territorial and climatic characteristics that are ideal for its cultivation, and it is no coincidence that it is the only one among the existing species of spelt to be a Protected Designation of Origin (PDO). Spelt is somewhat the progenitor of all cereals and was already consumed in Etruscan and Roman times. For years it ensured that the Umbrian population had the energy to survive and work the precious land of the Apennines, and today Monteleone Spelt DOP is an Italian excellence recognized worldwide.
“Whole” spelt means spelt that arrives on your table as it was harvested in the fields, without undergoing any artificial processing and deprived only of its inedible yellow coating (called Pula). This characteristic allows the grain to keep all its nutritional values intact and the authentic scents and flavors of wheat. At one time, when industrial processing did not exist, grains were consumed solely in this way.
In the kitchen, Monteleone PDO spelt is formidable: it maintains its texture perfectly when cooked, has an intense wheat aroma and flavor, and is suitable for both summer (spelt salads) and winter (spelt and legume soups) or for preparing a spelt version of risotto (farrotto). It requires 1 hour to cook, but cooking it with a pressure stove or soaking it the night before will take just 30 minutes!
