The border area between Lombardy and Emilia, below the Po River, is a land devoted to the cultivation of pumpkins. Right here the Rubini farm has its land where it grows the so-called “orange delight.” Matteo Rubini wanted to make the most of his pumpkin by dipping it in a special oil, the extra virgin olive oil of Brisighella, the first oil in Italy to be awarded DOP status in 1996.
Pumpkin in oil can be appreciated in all its taste and delicacy when eaten au naturel, but it can also be used to dress rice or spelt salads and to prepare special gourmet sandwiches; even during aperitifs it makes a good impression. Remember not to throw away the excess oil, it is a valuable oil that you can reuse!
