The red aubergine of Basilicata is a rare and distinctive vegetable. In appearance it is in every way similar to a tomato but is in fact an eggplant. Enrico and Maddalena came up with the idea of thinly slicing the red aubergine, sprinkling it with oregano and covering it with their very good extra virgin olive oil, for a delicacy that can easily be an appetizer to enjoy with friends or a side dish to pair with meat and fish.
