Fish Different’s Rustic Fillet of Anchovies with Chili is made through artisanal, manual processing of only anchovies caught in the Mediterranean Sea from Italian boats. The fish arrives at dawn, where it is selected and processed immediately while still very fresh. After processing, the anchovies are left to season for several months under controlled conditions-this is one of the secrets of the quality of Fish Different’s anchovies!
The freshness of Fish Different’s anchovies can be recognized by their perfectly intact, bright silver livery. The livery is nothing more than the skin of the anchovies, which in poorer products is removed to mask the lack of freshness of the catch or processing flaws; in Fish Different’s Rustic Anchovies Fillets the livery is intact and naturally colored.
In this version of anchovy fillets, that hint of panache has been added that is so reminiscent of Fish Different’s Calabria. Slightly spicy, the combination with extra virgin olive oil makes them irresistible. Try them during aperitifs, but also for seafood pasta recipes or on hot crostini!
