Strascinati are a typical pasta format from the regions of Apulia and Basilicata, very similar to the famous orecchiette pasta but slightly larger. They are handmade and ‘dragged’ (hence the name) using 3 or 4 fingers and a wooden board. The result is a smooth and homogeneous side, the one in contact with the wood, and a rough and irregular side, ready to hold tasty sauces.
This version by Enrico and Maddalena of Masseria Agricola Buongiorno is enriched with the prized Senise IGP pepper, used to produce the famous Crusco Pepper, which is stone ground and added to the dough, giving the pasta its characteristic almost golden orange colour.
Cook the Strascinati for 10 minutes, maximum 12, in boiling salted water, drain them and toss them in a pan with important and tasty sauces: beans and sausage, tomato and chilli pepper, tomato fish sauces. A great classic of strascinati is the combination with delicious cime di rapa, a must try once in a lifetime!
