Enrico De Lorenzo’s Tomato and Ricotta forte sauce is a rustic sauce made with whole cherry tomatoes and “ricotta forte,” a fermented ricotta cheese typical of Apulia with a slightly bitter and spicy flavor. This sauce, with an intense and strong flavor given precisely by the ricotta forte, is one of the main recipes of the peasant tradition of Salento. The strength of the ricotta used is softened and rounded by the fresh basil and onion left to sauté. This sauce is cooked slowly and is ideal for a pasta dish with a tantalizing flavor to be eaten with friends, on bruschetta or added to legumes to give it that extra kick.
