Vin Santo is religion in Tuscany, all the more so in Chianti Classico. With this wine, Giacomo Grassi pays homage to his grandfather Olinto, producing it just as he began making it in 1918. Giacomo Grassi has 30 caratelli (small barrels typically used for aging sweet wines and balsamic vinegar) in his vinsantaia, 3 of which are the same ones that grandfather Olinto used more than a hundred years ago, still perfectly suited to their function!
Giacomo Grassi makes his Vin Santo del Chianti Classico exclusively from native Tuscan grape varieties: Trebbiano, Malvasia Bianca and San Colombano. The grapes are harvested very ripe in the last days of September and left to dry until close to Christmas. The liquid obtained from the pressing is then put into 70-liter kegs and left to rest for 8-10 years, after which it is passed into 120-liter kegs to allow it to “strip off,” that is, to naturally filter out by depositing impurities at the bottom, in 2-4 years. Finally, Vin Santo first spends 1 year aging in demijohns and then 1-3 years in bottles.
At the table, Vin Santo del Chianti Classico is the king of dessert wines: the great classic is paired with cantucci, but with dry pastries in general it is excellent; even with chocolate and dried fruit it can excite. It can be a great after-dinner wine drunk on its own, and remember, the longer Vin Santo sits in the bottle, the more it improves its aromas!

We are aware that excellent products need excellent packaging and at the same time we cannot risk damaging in any way the precious Italian culinary jewels: for this reason our warehouse is equipped with temperature and lighting ideal for food preservation and the most delicate ones (cheeses, cold cuts and craft beers) are stored inside cold rooms. During shipping, on the other hand, each product is protected with the packaging most appropriate to its characteristics.
Cheeses and cured meats, which despite being aged require special care, travel accompanied by a special slow-release gel ice inside isothermal bags: in this way freshness is preserved until the goods arrive at your home.
For our craft beers, which are unpasteurized and therefore more sensitive to high temperatures than normal, we use special isothermal bubble wrap, which can ensure that the accumulated cold is maintained for the shipping time while protecting the bottles from shocks.
To secure the precious bottles of Italian wine, we have equipped ourselves with special inflatable bags, designed solely for the purpose of immobilizing and protecting this product inside the box.
