Spelt from Monteleone di Spoleto is a triticum dicoccum variety of spelt that can only be cultivated in the Monteleone area.This exclusivity is due to the territorial and climatic characteristics that are ideal for its cultivation, and it is no coincidence that it is the only one of the existing species of spelt to be a Protected Designation of Origin (PDO). Spelt is somewhat the progenitor of all cereals and was already consumed in Etruscan and Roman times. For years it ensured that the Umbrian population had the energy to survive and work the precious land of the Apennines, and today Farro di Monteleone DOP is an Italian excellence recognized worldwide.
Cous cous is actually an all-Sicilian specialty, more precisely from the province of Trapani. The Angelini family wanted to make cous cous from its prized Farro di Monteleone DOP because in any case it is a versatile version of farro that lends itself to many recipes. With vegetables, with fish or with meat, spelt couscous pairs beautifully with any seasoning and is easy to prepare. In this preparation, Umbrian products combine with Sicilian history for a bombshell of flavor and wholesomeness.
