The Montoro Coppered Onion is a variety of onion grown in a restricted area between Avellino and Salerno with ideal characteristics for an onion with a sweet flavor and strong aromas. This onion has been the salvation of the poor people of these areas: when there was nothing else they ate bread and onion, a pairing that today with the appropriate reinterpretations and reworkings we can call gourmet. With the advent of industries, this onion was set aside and almost forgotten, but today it struggles to make its extraordinary organoleptic qualities known to all and far from standardization.
The Grilled Montoro Onion Cream is a delicacy thought up by Francesco Vastola. The philosophy remains the same, which is to use the best selected raw materials, as in this case the fantastic Montoro copper onion, and process them in an artisanal way with only natural ingredients.
