The Tonda Iblea cultivar is one of Sicily’s most famous and sought-after olive varieties. This particular olive, which as its name implies grows only in the territory of the Iblei mountains, is able to give bitter sensations to the taste followed by a delicately spicy and spicy trail.
The system of harvesting, pressing and storage of the oil used by Dario is cutting-edge and meticulous, worthy of such important trees: harvesting begins prematurely in mid-September with the system of brucatura, to minimize possible damage to the fruit; milling takes place within 6 hours of harvesting and strictly cold; finally, storage takes place at a controlled temperature under nitrogen, to limit oxidation as much as possible.
On the nose, scents of citrus, almonds and acacia blossom stand out, followed by notes of tomato and Sicilian herbs.
On the palate, ripe apple, pine nut and tomato make themselves felt, all enriched by a touch of cinnamon.
In the kitchen it can be fully appreciated on a warm bread bruschetta and is suitable for seasoning robustly textured dishes such as meat, fish or grilled vegetables; for an all-Sicilian pairing the ideal recipe is Matalotta, the typical Syracuse fish soup.
