Senatore Cappelli wheat has an irresistible aroma
The origins of Senatore Cappelli wheat date back to the early 1900s. In fact, in 1915 Senator Raffaele Cappelli (from whom the wheat’s name is derived), allowed researcher Nazareno Stampelli to cultivate an experimental field to obtain the best variety of wheat he could produce. The result was precisely what is now called Senatore Cappelli: a wheat with tall, fragrant and nutritious ears, with low yields but very high quality, so much so that in the 1930s it was even called “the Chosen Wheat.”
One of the best characteristics of ancient grains, and consequently of Senatore Cappelli wheat, is that it contains very low amounts of gluten: in fact, the gluten index of modern grains is as much as 4 times higher than that of Cappelli wheat! It also appears that the quality of gluten contained in ancient grains is higher and therefore causes fewer problems.
In the kitchen, Pici of Senatore Cappelli wheat will delight you if accompanied by a glass of structured red wine, which they can hold because of their strong flavor; beer can be an appealing alternative. Some of the most suitable sauces for seasoning these pici include Aglione sauce, meat and game sauces and especially wild boar, mushroom sauces and sauces with truffles; Pici cacio e pepe may also be a tasty idea.

Ancient grains, to which Senatore Cappelli wheat belongs, are a panacea for our health when consumed regularly.
The glycemic index of ancient grains is much lower than “modern” grains because they are less refined, which has positive effects on the prevention of diabetes and blood values. They are much more digestible and richer in nutrients, having a very low yield and deep roots that allow them to capture more nutrients from underground. They also have a high protein and vitamin content.

For our craft beers, which are unpasteurized and therefore more sensitive to high temperatures than normal, we use a special isothermal bubble wrap, which can ensure that the accumulated cold is maintained for the shipping time while protecting the bottles from shocks.
