There are dozens and dozens of varieties of beans in Italy. One of the rarest and most unobtainable is definitely the Monachella bean. Its seed is jealously guarded by the Angelini family, which grows it on the slopes of the Umbrian Apennines, ideal soil for the development of the chromatic and organoleptic characteristics of this legume. It often happens that this bean is all sold out well in advance of the end of the season, and that says a lot about how much they like it!
Monachelle beans have a well-defined flavor, so much so that they can afford to be enjoyed even if only boiled and dressed with an excellent Italian extra virgin olive oil. They need to be soaked for about 12 hours before being cooked for an hour on low heat or for half an hour in the pressure cooker. Our advice? Soak them in cold water in the evening, rinse them the next morning and cook them for lunch or dinner!
