The name of this bean immediately brings to mind the place where the souls of the departed in Dante Alighieri’s Divine Comedy were purified while waiting to enter the gates of Paradise. The name actually derives from an ancient custom in central Italy, namely the “Pranzo del Purgatorio” (Purgatory Lunch), which was organized to raise funds for families in need and whose main dish was precisely the bean.
The special feature of this bean is that it does not need to be soaked before cooking. It will be enough to boil it for an hour on low heat or for half an hour in the pressure cooker.
Like all beans it is an excellent side dish but can also serve as a main course because of its high nutritional values. A good Italian red wine is just what you need to fully enjoy the taste of a sought-after bean like this.
