Legend has it that when Aeneas’ ship was about to depart from the coast of Latium, the sailors noticed tiny black fruits floating in the sea and, intrigued, tasted them: the bitterish, salty taste of the Itrana olive left them open-mouthed, so much so that they regretted having to leave a land capable of offering such delicacies.
The Itrana cultivar olives that give rise to Alfredo Cetrone’s EVO Intenso oil are grown at an altitude of 250 to 500 meters above sea level, on rocky soils constantly exposed to the sun and caressed by the sea breeze coming from the Tyrrhenian Sea.
The harvest period is from October 1 to December 31, depending on the year and the ripeness of the olives.
It is clear to the eye, with a beautiful deep green color.
To the nose it offers complex and enveloping, characterized by intense herbaceous scents with distinct fruity hints of artichoke, thistle and tomato.
The taste opens with elegant notes of artichoke, thistle, tomato and balsamic herbs such as sage and mint, with decisive bitterness and spiciness in good harmony.

In cooking, it is excellent raw on artichoke, ovoli and porcini mushroom salads, fish and beef carpaccio and tartare, raw shellfish, vegetable and legume soups, grilled tuna tagliata and swordfish steak, grilled red meats, and aged stringy cheeses.

Cheeses and cured meats, which despite being aged require special care, travel accompanied by a special slow-release gel ice inside isothermal bags: in this way freshness is preserved until the goods arrive at your home.
For our craft beers, which are unpasteurized and therefore more sensitive to high temperatures than normal, we use a special isothermal bubble wrap, which can ensure that the accumulated cold is maintained for the shipping time while protecting the bottles from shocks.
To secure the precious bottles of Italian wine, we have equipped ourselves with special inflatable bags, designed solely for the purpose of immobilizing and protecting this product inside the box.
